Mushroom Pepper fry







Ingredients

    Mushrooms - 1 cup
    Capsicum / bell pepper - 1/2 cup(sliced)
    Onion -  1
    Ginger Garlic paste - 1 tsp
    Black pepper powder - 2 tsp
    Salt  to taste
    Oil - 1 Tbsp
    Coriander leaves(Cilantro)   for garnish




 
Method

Clean the mushrooms and slice them. Cut the onion and capsicum length wise.
Heat oil in a pan. Add onions and saute till turns golden brown color.
Add ginger garlic paste and mix well.
Add capsicum  and sliced mushrooms, salt and mix well. Close with a lid and cook for 5 mins.
Sprinkle black pepper powder, Simmer for 2 mins so that the pepper powder could coat the mushrooms well.
Garnish with cilantro and serve hot with roti,chapati or naan
.

Whole Bhindi fry







  
Ingredients

Bhindi/Okra -  8-10 (washed and dried)
1   tsp coriander powder
1/2 tsp cumin powder
1/4 tsp haldi powder
1/2 tsp garam masala
1  tsp red chili powder  
1/2 tsp tamarind paste
1/2 tsp sugar
Salt as per taste
1 Tbsp Oil



Method

Remove the top of bhindi (if u want u can cut other end of the bhindi)
Now make a slit from middle of the bhindi
Heat  oil in a frying pan and add bhindi Stir fry until bhindi turns into soft.
Add tamarind paste with little water and mix well.
Add salt and all the powders as mentioned above and cook in simmer 5 mins.

Tinda Masala





   
Ingredients

    10 - 15 Tinda ( cut into 6-8 pieces lengthwise)
     1 Tbsp oil
    1/2 tsp cumin seeds
    1 tsp coriander powder
    1/2 tsp red chilli powder
    1/4 tsp turmeric powder
    1/2 tsp garam masala powder
    1 green chillies-slit
    Coriander leaves-chopped
    Salt for taste 



Method

Heat the oil and add cumin seeds.
When the seeds begin to splutter, add the green chillies and tinda, and stir-fry 2-3 times.
Add coriander powder, salt, red chilli powder, turmeric, and the garam masala. Stir to mix well.
Cover and cook over low heat, stirring a few times till cooked.
Garnished with coriander leaves.

Bitter Gourd Rings (Karate podi)



Ingredients

2-3 bitter gourds
1 cup rice flour
1 tsp chilli powder
Pinch of hing powder(Asafoetida)
salt to taste
oil  for deep fry


Method

 
Wash and rinse whole bitter gourd. Slice into rounds and  make it thin. Sprinkle a little salt over the bitter gourd slices and set aside.
Remove the salt water from the bitter gourd slices
Take a bowl in that mix chilli powder, rice flour, hing and litte salt( because you have already sprinkled a few on the bitter gourd). Add a little water and make a thick paste.
 Add the bitter gourd slices and mix well so that the paste is coated on the slices.
Heat oil in a kadai or deep fryer. Add the slices one by one to the oil.
Turn the slices upside down and fry till both the sides get dark red color.

Cauliflower Pakoda(Baje)




Ingredients:

2 cups  cauliflower florets
A pinch asafoetida(hing)
1/4 tsp jeera(cumin seeds)
1 cup besan (gram flour)
1/2 tsp chilli powder
Salt for taste
1/2 tsp turmeric powder
Oil


Method:

Keep the cauliflower florets in hot water with salt and turmeric powder till 5-10 mins..
Strain the water and keep aside
Make a batter from besan, asafoetida, chilli powder,jeera salt with little water.
The batter should not be too thick or too thin.
When the Cauliflower dipped in batter, it should hold a coating of batter.
Heat oil for deep frying.Drop the cauliflower florets in to oil.
Fry them until they turns golden brown

Potato Stir fry








Ingredients:

    3 medium size potatoes cut into halves and then sliced thinly
    1/2 tsp mustard seeds
    1 tsp Chili powder  
    Salt for taste
    2 tbsp Oil
    Pinch of turmeric powder

Method:

    Heat the oil in a pan on a medium flame. Add the mustard seeds when its spluttering
    Add the chili powder
    Add the potatoes, tumeric powder and salt to taste and mix well.
    Cook till potato turns into golden brown color(until it fry)
  

Note: You can also try with Bhindi with same ingredients!!!

Bhindi Sambar




Ingredients:
   
1 cup toor dal(boiled)
2 cups bhindi(cut into medium slices)
2 Red chillies
1 tomato(chopped)
2 tsp Sambar powder
Jaggery small piece
Curry leaves
a pinch of hing
1/2 tsp mustard seeds
salt for taste
Oil
Coriander leaves

Method:

    Boil water and cook the toor dal( cook the toor dal in cooker also)
    Cook the bhindi and tomato with litte water
    add salt and jaggery
    Now add the cooked tool dal and simmer for a few more minutes
    add sambar powder and stir well for 5- 10 mins


For seasoning:

    Heat oil in a pan add musturds after splutter mustards  add red chillies, curry leaves, hing and
 keep frying  for  few minutes.
    Season the Bhindi sambhar with the above prepared tadka.
    Garnish with coriander leaves!!!

Biscuit Ambade


Ingredients

1 cup urad dal
4-5 curry leaves(chopped)
small piece ginger (chopped small pieces)
2-3 green chilies(chopped small pieces)
Oil for deep fry
Salt


Method

Soak urad dal for around 2 hrs
Grind the urad dal in smooth paste (with less water) the paste need not become very thin(soft)
Add curry leaves, ginger, green chillies and salt and mix well
Heat oil, drop small balls of the batter in hot oil and fry on a medium flame.
fry untill its turn become golden brown
Serve hot with green chutney.

Goli Baje





Ingredients

1 1/2 cup maida(all purpose flour)
2 tsp gram flour (besan)
3/4 cup  yogurt or buttermilk
1 tsp finely chopped ginger
1 tsp finely chopped green chilies
3-4 finely chopped curry leaves
1/2 tsp baking soda
1 tsp sugar
Salt
Oil for deep fry
Water

Method

Mix all the ingredients into a dough, dough should not be very be very thick or very thin. Leave the dough for around 30mins.
Make small balls of the dough and drop into hot oil. Deep fry.
Serve hot with chutney.

Grind the red chili with tamarind in smooth paste
Heat a pan add oil fry chopped onion few mins add chopped cauliflower fry it 5- 10 mins add salt and grinded paste with little water cook 10 mins...

Bread Masala


Ingredients


 Bread Slices 4-5

 Onion(small) 1
 Tomato 1/2
 Ginger Garlic paste 1 tsp
 Chili powder 1 tsp
 Garam masala powder 1 tsp
 Turmeric powder 1/4 tsp
 oil
 salt for taste
 Tomato sauce 2 tsp
 Coriander leaves


 Method

Cut the  bread slices into small square pieces.
Heat oil in a pan.Add chopped onion fry it add  ginger garlic paste fry few mins after add chopped tomato and fry it.
Add  chilli powder, pinch of turmeric powder,garam masala powder, salt for taste and tomato sauce mix it well
Add the bread pieces and mix well
Garnish with coriander leaves.

Karate Nonchey(Bitter gourd pickle)




Ingredients:

2 small bitter gourd
1/2 cup  grated jaggery
2 tsp red chili powder
1/2 tsp mustard seeds
1  tsp cumin seeds
2  tsp tamarind extract(paste)
Oil
Salt

Method:


Wash and cut bitter gourd into desired shape.and mix it with salt for 10 to 15 mins.after 15 mins remove that salt water
take a pan add oil after heat add mustard seeds and cumin seeds
after few mins add bitter gourd fry it 5 - 10 mins add chili powder,tamarind paste,jaggery and salt with little water cook 5 - 10 mins until it become dry!!!

Veg Kurma






Ingredients

1 Carrot
1 small potato
1/2 onion
1 small tomato
6 medium pieces of califlower
 Green peas
2 small green chili
little coriyander leaves
3 red chili
garlic 4 flakes
ginger small piece
2 cloves
10 cashews
2 tsp coriyander seeds
1 tsp jeera
1 tsp gharam masala pwd
4 tsp grated cocunut 
1/2 tsp ghee
salt for taste


Method

Grind grated coconut,red chili,green chili,coriyander leaves,jeera,coriyander seeds,garlic,ginger with water in smooth paste add cashews grind well
  boil all the vegitables add salt and mix the above masala and heat till 10 mins add gharam masala pwd mix well after that add ghee.
Goes well with puri,parata and chapati!!!

Bread Pakoda





Ingredients


4-5 Bread Slices
1cup Gram Flour (Besan)
1/4 tsp cumin seeds
Salt to taste
Red chili powder
Water for batter
Oil for frying

Method

    Cut Bread slices into desired shapes
    In a bowl add gram flour, salt, chili powder and cumin seeds mix it.
    Now by pouring little water at a time make a smooth batter
    Heat oil in a Deep fry pan
    Dip bread piece in the batter and fry till crisp on medium flame.
    Serve with tamato sauce or chutney!!!

Tomato Bhath(Upma)





Ingredients

    Upma rava - 1cup
    Curry leaves
    2 Green chillies(chopped)
    Peanuts - 5
    Mustard seeds - 1/2 tsp
    1 small onion - chopped
    1 medium tomato- chopped
    Salt to taste
    2 cups water
    Pinch of turmeric powder
    Lime juice 1 tsp
    Chopped coriander

Method


    Heat the oil in a pan and add the mustard seeds, curry leaves and green chillies. When the spluttering stops  add the  peanuts fry it
    Add the onion and tomatoes and fry 5 - 10 mins
    Add the water,lime juice, turmeric and salt to taste and bring to a boil.
    Add the upma rava stir constantly..
    cook till its done and Garnish with chopped coriander leaves!!!

Batata Vada(batata ambado)






  Ingredients

    2 Big potatoes ( boiled, peeled and mashed)
    3-4 curry leaves(chopped)
    1/2 tsp mustard seeds
    1/2 tsp urad dal
    2 green chili(chopped)
    coriander leaves(chopped)
    1/2 tsp turmeric
    1 tsp lemon juice
    oil for deep fry
    Salt to taste

Method

    Wash the potatoes and cook them in cooker
    After it has cooled, peel the skin, mash it in a plate and keep aside.
    Take a pan and heat oil. Add the mustard seeds,urid dal and curry leaves
    Add the mashed potato, turmeric powder and salt stir until everything is mixed.
    mix well and cook on simmer. Add the chopped coriander leaves and lemon juice, stir well. keep aside.

 Coating for the vada

    1/2 cup gram flour (besan)
    1 tsp red chili powder
    1/2 tsp baking soda
    1/2 tsp jeera
    Asafoetida(hing)
    Salt to taste
    water

 Method

    Take a bowl and mix all the above ingredients well.
    Add water to this mixture  and mixing it well until it becomes a smooth paste.(not too thick or thin)
   
    Heat sufficient oil in a pan for deep frying.
    Make small balls  from the stuffing  dip the ball into the batter and drop it into the hot oil.
    Fry it and then turn it around until it gets light golden brown color.
    Serve hot with green chutney or tomato sauce!!!

Misal Paav








Soak the 1 cup Green Peas in Water for Overnight
2 Tomatoes
1 onion
salt for taste
4 flakes of garlic
2 tsp Pav Bhaji powder
Oil
Salt for taste


Method

Green Peas, chopped onion and tomatoes with water cook it in cooker( 4 vessel)
after its cool take it from cooker and add salt cook for 10 mins
make a seasoning( phanna) of garlic and add 2 tsp Pav bhaji powder
and add that to misal curry!! Goes well with paav!!!

Cucumber Dosa(Tousali)




Ingredients

 1 cup Raw Rice
 1 cup Cucumber(grated)
 1/2 cup Coconut(grated)
 2 Green chili
 Ghee
 1/2 cup Jaggery
 Salt to taste
 Water


Method

Soak the raw rice about 2 hrs
Grind the rice, along with the coconut,green chili, jaggery to get a smooth even paste.
The batter should not be too thick..To the paste(batter) add grated cucumber and salt
On medium flame, heat a non-stick tava and apply ghee on that pour some batter over the hot tava and spread it evenly
Cover the dosa with a lid and cook both side over a slow flame till it becomes crisp and golden brown in color.

Mushroom Sukka


Ingredients


Mushrooms(sliced) - 2 Cups
Tomato(medium)chopped - 2
Onion(medium)chopped - 1
Grated coconut - 1/2 cup
Red chili(byadagi)  4-5
Cloves - 2
Cinnamon(small piece)
Garlic flakes  2-3
Cumin seeds- 1/2 tsp
Coriander seeds-3/4 tsp
Curry leaves
Salt to taste

Method
Heat oil in the pan fry red chili ,cumin and coriander seeds,cloves and cinnamon.
grind the grated coconut with little water  and after add above fried ingredients with smooth paste finally add garlic and grind it
Take a pan add oil after it heat add curry leaves,chopped onion fry it few mins til onion turn into  brown color after add chopped tomato and mushrooms cook 10 - 15 mins in a medium flame 
after mushroom cooked add that masala and salt and cook till become the masala is thick.
Goes good with roti,chapati and rice!!!

Bhindi Masala



Bhindi sliced- 2 cups
 Tomatoes 2
 Onions 1
 Garam Masala 1 tsp
 Ginger-garlic paste 1 tsp.
 Red chilli powder 1 tsp.
 Coriander powder 1 tsp
 Jeera Powder 1/2 tsp
 Oil as needed
 Chopped Coriander leaves
 Salt for taste
 Cloves 2

Method

 Dice the onions
 Dice the tomotoes
 Slice Bhindi ( Okra) in long pieces.
 Heat the oil in pan and add the Bhindi pieces.  Fry them few mins
 Keep the fried bhindi aside..Heat oil in a pan. Add the  cloves after a minute add onions and fry them until light brown.
  Add the ginger-garlic paste and fry for one minute.  Add tomato pieces fry it few mins add  red chilli powder,garam masala,coriander and jeera powder  fry for 2 minutes. and salt, cover the pan and cook for a few minutes until tomatoes become soft. Add fried okra and mix slowly. Keep on heat for two more minutes..Garnish with coriander leaves!!!
