Veg Penne Pasta



Ingredients

1 cup Penne Pasta
1/4 cup Slice Mushrooms
3 Sunripe Tomatoes
2 Whole Red Chili
2 tsp Minced garlic
3 tsp Pasta sauce
4 tsp Oilve oil
Salt for taste
Grated Cheese
Cilantro (coriyander leaves)

Method


Heat the water and add Penne Pasta and add salt.boil it until it becomes tender(15 to 20 mins)
In cooking pan Fry 2 red chili with olive oil add minced garlic,sunriped tomato,mushrooms fry it 5-10 mins
add pasta sauce after  add that cooked pasta and mix well and add grated cheese.Finally garnish with coriyander leaves.

Masala Dosa


Dosa

 Ingredients

1 cup urad dal
2 cups dosa rice
2 cup rice flour
1/2 cup maida
1/2 tsp baking soda
Salt
Soak urad dal and rice separately for 2-3 hrs. Grind dal to a very smooth paste. Now grind rice to a smooth paste. Mix both well. Now mix rice flour, maida, salt to it and mix well. Leave it for 4-6hrs (or overnight). Do not make the batter too thin.
Add soda to it and mix well.

For Bhaji

Ingredients

Onion 2
Potatoes 3
Green chillies 3
Mustard 1/2 tea spn
Turmeric a pinch
Curry leaves 1 strand
Coriander leaves 5-6 strands
Oil 1 tea spn
Salt

Method

Cook potatoes with a pinch of turmeric in pressure cooker or microwave. Peel and mash them with hand.
Heat oil and add mustard seeds. When they start spluttering,curry leaves and green chillies. Fry for a while. Then add chopped onion and fry till they are transparent. Now add potatoes and salt. Add a half cup of water. Cook for 2 minutes(till the water gets absorbed) and remove from flame. Garnish with coriander leaves.

For making masala dosas

Heat tava and spread a big spoonful of batter over it. Make the dosas thin and crisp by using ghee or oil Roast it from both side. Spread the bhaji in the middle and fold it in the desired shape
Serve with green chutney and sambar!!!

Veggie Bread Pakora


Ingredients

 4-5 Bread Slices
1cup Gram Flour (Besan)
1 cup Chopped tomato,onion,capcicum and coriyander leaves
1/4 tsp red chili powder
1/2 tsp cumin seeds
Water for batter
Oil for frying
Salt for taste

Method

    Cut Bread slices into desired shapes (like square, triangle etc.)
    In a bowl add gram flour, salt, chili powder, cumin seeds and chopped vegetables
    Now by pouring little water at a time make a smooth batter
    Heat one tsp oil on a non-stick pan/tawa keep bred slices apply that batter one side
    after few mins reverse the bread slice apply batter and fry it both the side in medium flame with oil
     Serve bread pakora hot with tomato sauce.

Aloo Gobi


Ingredients

1 Medium Size Cauliflower, cut into medium piece
2 Potatoes, cut into small pieces
1 Teaspoon Ginger, grated
1/2 Teaspoon Cumin Seeds (Jeera)
1/4 Teaspoon Mustard Seeds
1/2 Teaspoon Turmeric Powder
2 Teaspoon Coriander Powder
1 Teaspoon Red Chili Powder
1 Teaspoon Garam Masala Powder
A Pinch of Asafoetida (Hing)
2 Tablespoon Oil
Salt to Taste
Oil for Frying
1 Tablespoon Cilantro (Coriander Leaves), finely chopped


Method

Heat oil in a pan, add cumin seeds and Mustard seeds and wait until seeds crack. Add asofoetida, turmeric powder and grated ginger after few mins add cut pieces of Cauliflowe fry it 5 mins after add potato pieces fry 5 mins add coriander powder, garam masala powder, red chili powder, and salt, mix well.add little water and cook 10 mins . Garnish with chopped cilantro
You can be served with  chapati, parathas, and puris.

Carrot Halwa(Gajar Ka Halwa)

 

Ingredients

    2 cups shredded carrots
    1 cup milk
    1/4 cup sugar
    1/2 teaspoon cardamom powder
    2 tsp Ghee
    6 Cashew
    4 Raisins(Dried grapes)

Method

    Fry the cashew and Raisins(Dried grapes) with 1/2 tsp of ghee set aside
    In a pan take the shredded carrots and stir-fry for 5 -10 mins
    Carrots should be tender and slightly changed in color.
    Add the milk and cook until the milk dries.
    Add ghee and mix well
    Next add the sugar, and cardamom powder and stir-fry for few mins
    Finally add the Cashew and Raisins(Dried grapes)
 

   

Gobi Manchurian


Ingredients 


1 Small sized cauliflower
3/4 cup Corn flour
1 Onion finely Chopped
1 small piece of ginger chopped
2 green chili chopped
6 Garlic flakes chopped
2 tsp Ginger and Garlic Paste
3 tbsp Tomato sauce
2 tsp Soya sauce
1/2 tsp red chili powder
Oil as needed
salt for taste
coriyander leaves

Method
     

cut the gobi into florates placed in salted hot water for 10-20 mins
after drain the water add  red chili pwd,salt,ginger garlic paste and corn flour with little bit of  water mix well and deep fry it in oil          
Heat the oil in cooking pan  add chopped garlic  fry it add chopped ginger and green chilis fry 2 to 4 mins
add onions fry till turn into golden brown
add salt for taste after that add soya sauce mix well add tomato sauce
add that fried gobi and mix well
Finally garnish with coriyander leaves!!!!

Banana Bread


Ingredients    3 or 4 ripe bananas, smashed
    1/3 cup melted butter
    1 cup sugar (can easily reduce to 3/4 cup)
    1 egg, beaten
    1 teaspoon vanilla
    1 teaspoon baking soda
    1 1/2 cups of all-purpose flour

Method
No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.

Veg Fried Rice


Ingredients

 White rice – 2 cups
Choped spring onion- 1/2 cup
Diced Carrot- 1/2 cup
Green Peas -1/4 cup
chilly sauce - 1 tsp
Soya Sauce -2 tsp
tomato sauce – 1 tsp
Pepper powder – 2 tsp
Salt – to taste
Oil – as needed

Method
Heat oil in a pan and add spring onion fry it 5 mins add carrot and green peas and saute well.Add soya sauce,chilly sauce,tomato sauce and salt to it.Stir for few minutes. Add rice mix well finally add pepper powder

Palak Dal Fry


Ingredients
Palak chopped- 2 cup
Toor daal(cooked)- 1/2 cup
Tomatoes - 1
Red chili-2
Cumin seeds- 1/2 tsp
Turmeric powder 1/4 tsp
Mustard Seed -1/4 tsp
Oil - 2 tsp
Salt as per taste

Method
 Heat oil in a pan.
 Season with red chili,cumin seeds and mustard seeds
 When it splutters add the chopped palak and stir until cooked
 Add the finely chopped tomatoes.
 When it is cooked add cooked dal.
 Pour enough water,add salt and turmeric powder.
 Boil for 5 - 10 mins
 Garnish with Coriyander leaves(Cilantro)

Veg Hakka Noodles



Ingredients
1 Pkt of veg Hakka noodle
1 small onion
1 small tomato
1 small capcicum
1 green chili
1/2 tsp red chili pwd
1 tsp ginger garlic paste
2 tsp soya sauce
2 tsp tomato sauce
1 tsp red chili sauce
 Salt for taste 
  Oil

 
Method

Boil the noodle as mention in the pkt and remove that water
cut onion,tomato,green chili and capcicum long slices
take a pan add oil fry onions til it turn into golden brown add ginger garlic paste mix well add capcicum fry it add tomato fry til 10 mins add salt, chili pwd and all sauces mix well after that add that noodles.
Garnish with coriyander leaves 

Tomato Soup


Ingredients

Tomatoes 4
carrot 1
butter - 1/2 tsp
Pepper powder- 1/2 tsp
Salt for taste
Bread cubes(fried in oil or ghee)


Method

Peel, wash and cut carrots into roundels and boil with tomatoes 10 - 15 mins after they cooked remove the tomatoes peel
 Cool and blend in a blender to a smooth paste. Bring the mixture to boil adding 1 cups of water. Add salt,pepper and butter.Serve hot garnished with bread cubes.

Mushroom Chilli


Ingredients

 2 cup(cut pieces)  Mushrooms
 1 Capcicum
 2 medium Onions
 Small piece of  Ginger
  6 Flakes Garlic
  4 Green Chili
   Oil for fry
 1 tsp Ginger Garlic paste
 1/2 tsp Chili Powder
 2 tsp Soya Sauce
 2 tsp Tomato ketchup
 2 tsp Red chilli sauce
 6 tsp corn flour
 1/4 cup corn flour water(1 tsp corn flour add water and make it 1/4 cup)
  Salt for taste
  Coriyander leaves



Method

Cut the mushrooms into medium pieces add chili pwd,salt,ginger garlic paste and corn flour with little water mix well and fry it in oil
Cut the onions,capcicum and green chilis in long slices
Cut the garlic and ginger in small pieces
Take a pan put oil add chopped garlic fry it
Add ginger and green chilis fry 2 to 4 mins add onions fry till 5 mins
Add capicum fry 10 mins add salt for taste
Add soya sauce mix well add tomato ketchup and red chilli sauce mix it well
Add corn flour water after boiling that water now u add that fried mushrooms.
Finally garnish with Coriyander leaves.

Veg Cutlets


Ingredients


Potato - 4 (Boiled and mashed)
Beetroot - 2 (Boiled and mashed)
Onion   - 1/2
Green chillies - 2 (chopped finely)
Curry leaves
Urad Dal - 1 tsp
Gharam masala powder- 2 tsp
Oil
Bread crumbs
Salt - As per taste


Method

.Boil the beetroot and potato both and grate it...
.In a pan take oil and add urad dal,curry leaves and green chillies
.After 5 mins add chopped onion and fry it till turn into golden brown
.After that add grated beetroot stir it 10 to 15 mins after add potato mix well
.Add gharam masla powder and salt for taste  keep it fridge sometimes(3hrs)
.Remove from fridge and allow to thaw for some time
.Roll in Bread crums and shallow fry in a sauce pan with oil slathered on it
.Serve hot with Green chutney and Tomato sauce.

Palak Vada


 INGREDIENTS : 

2 cups chopped spinach
1 onion chopped(small)
1 cup rice flour
1/2 cup besan
1/2 tsp ginger garlic paste
1 tsp cumin seeds
1/4 tsp chili powder
salt and water to make stiff dough
oil for deep frying

 METHOD


.Mix all the above ingredients and make a stiff dough ( like chapathi)

.Heat oil in a pan , shape vadas and drop in to oil

.Fry them on medium flame until golden color

Serve with Tomato Sauce!!!!

Sooji Halwa(Sheera)


Ingredients

Sooji 1 cup
Sugar 3/4 cup
Ghee 1/4 cup
Raisins(Dried grapes) & Cashews 1tsp
Water 2 cup(boiled water)
Cardamom powder 1/2 tsp


Method

  Heat ghee and add cashews and raisins fry for sometime in cooking pan. Add sooji and fry on low flame till the light brown add boiled water and suger cook till water is absorbed. Add cardamom powder and mix well.
After its cool cut it in square pieces!!!
